The Martayrol family owns its orchards and distillery in the village of Cambremer in the heart of the Pays d’Auge. According to an old family recipe, the apples are harvested, pressed and fermented into cider by varieties and then aged for 10 months or more. Also, according to that old receipe, the Chauffe-Coeur Calvados is a blend made of single-distilled and double-distilled Calvados, and therefore it has to lose the Pays d’Auge appellation for which all the Calvados have to be double distilled by law.
