El Bajío is located in the Jesus Maria municipality, 7 km from Jesus Maria town at an elevation of 2170 to 2175 meters, with gentle slopes north to south. The name refers to the lower part of the valley. The Agave harvested for this production was planted in 2012 & 2013 when the plants were 1 year old. Agaves weighed 20 kgs at harvest with 27% sugar content.
Tequila Ocho is produced as a collaboration between Tomas Estes (the man credited with bringing the first bottle of Tequila to Europe) and renowned distillers, the Camarena family. What’s really unique about Tequila Ocho is that it bears the first ever ‘Tequila vintage’. This ‘Vintage’ signifies the exact year of harvest and location of the Agave plants that the spirit was derived from, under-lining the finely balanced relationship between the terroir and quality of raw materials. Most Tequilas are distilled for consistency, Tequila Ocho Single Estate Vintages will showcase complex nuances in nose and flavor year to year for each of their Tequilas. ‘Single Estate’ means all of the Agave are harvested from a single field, which bear the personality of the soil and climate. Each vintage will produce a limited number of bottles from a separate estate.
