Many of the botanicals are locally and sustainably sourced, and the pine needles are hand foraged from trees surrounding the distillery. - 11 botanicals include juniper, coriander, cardamom, cinnamon, lemon & orange peel, pine needle, lavender, chopi (Korean sansho peppercorn), baby ginseng, and perilla leaf
- Triple distilled in a copper pot stills; botanicals are macerated in twice-distilled single malt spirit for 24 hours before the third and final run through a 1,000-liter copper pot still
- A vibrant, inviting nose of lime oil, green cardamom, lemongrass, and genever-esque malt wine; the palate shows herbaceous shiso, lavender, tangerine, and pine sap; cooling mint, cinnamon, and piquant sansho peppercorn keep things lively through the finish
