Louis Latour Chablis La Chanfleure is made from 30-year-old Chardonnay vines planted on limestone soil in the famous Kimmeridgian hills of the Chablis region, in the heart of Burgundy. Once the grapes have reached optimum ripeness, they are harvested by hand and then taken to the winery in small crates. There the grapes are destemmed and pressed and the resulting must is fermented in stainless steel tanks at a controlled temperature and with complete malolactic fermentation. The wine then spends 8-10 months on lees in these same tanks.
